Cannelé (pronounced Kah-ne-lay) are rich little pastries from Bordeaux. You may see it spelled with one “L” too, but that is reserved for those pastries actually baked in Bordeaux, and ours are baked fresh in Lafayette.

Cannelé can be fussy to create: they require an overnight rest, precise temperatures for baking, and a prayer to St. Honoré (the patron of Baking) to ensure they don’t stick to the molds.

The flavor and texture is divine: they are a symphony of rum and vanilla bean. The interior is a rich custardy texture that melts in your mouth, and is the ideal finish to your coffee break.

We recommend serving them warm: a quick 5-8 seconds in the microwave will do it, or a few minutes in an oven.
